Bakell's Bubbling Cupcake
Happy New Year Bakell Fam! With 2022 right around the corner, we here at Bakell want to make sure that you celebrate this New Years with style and spunk. And to start off on a great note- with glitter, shimmer, sprinkles and more!
So- let's put the most universal celebration beverage and dessert together to make the amazing Bakell's Bubbling Cupcake! In other words- a champagne cupcake!
We're going to walk you through making two versions, a classic mimosa themed cupcake and a white-chocolate glitter bark cupcake.
The first step we need to take is making the champagne reduction that we're going to be using in both the cupcakes and frosting. You're going to use one and a half cups of champagne and cook it down to only 3/4 cups. Cooking it down will allow for double the amount of flavor in half of the liquid. This will allow the cupcakes to have a great texture. Once the champagne has been reduced, set it aside to cool.
Now, it's time to make the cupcakes!
We're going to start by creaming the butter, sugar and oil together until it's beautifully fluffy and light in color. The change will be very apparent.
Then, add in two large eggs and a half teaspoon of vanilla extract while also alternating1 1/4 cups of all purpose flour, 1 1/2 teaspoons of baking powder, 1/4 teaspoon of salt,1/2 cup of reduction and 1 tablespoons of all purpose milk.
Grab a cupcake sheet, fill them 3/4 of the way to the top and bake them at 350 degrees for 14-16 minutes.
While the cupcakes are baking, it's time to make the buttercream!
Combine 3/4 cup of unsalted butter (at room temperature) and 1/4 cup of shortening in a large mixing bowl to beat until it's smooth. Add about 2 cups of powdered sugar to the mixture and mix until it is smooth and well combined. Next, add three tablespoons of the champagne reduction and 1/8 teaspoon of salt.
Add in the remaining 2 cups of powdered sugar and the rest of the champagne reduction in order to obtain the right consistency. And there you have it!
Now, we're going to pipe the frosting onto the now cooled cupcakes in any style that you'd like! We went with this beautiful swirled design.
