Last night, I decided to try out a new fruity pebbles cheesecake recipe that has been fairly popular on several blogs! Fruity Pebbles had to one of my favorite cereal brands as a kid, so there was no way I could resist making this!
The best part about this fruity pebble cheesecake is that you don’t need an oven! Yes, that’s right. This is a no - bake recipe!
By adding my own twist to this recipe, I made it have the softest filling with a glittery garnish to appeal anyones attention. This cheesecake is perfect for any occasion and everyone with a sweet tooth will coming back to you for more!
You will need the following ingredients to start:
FOR THE CRUST
1 (10-oz.) bag marshmallows
1/2 c. (1 stick) butter
5 c. Fruity Pebbles
FOR THE CHEESECAKE
2 (8-oz.) blocks cream cheese, softened
1/2 c. granulated sugar
1 tsp. pure vanilla extract
Pinch of kosher salt
2 c. whipped topping
1/2 c. Fruity Pebbles, plus more for garnish
Making the crust
. In a large saucepan over medium heat, melt marshmallows and butter, stirring to combine. Remove from heat and stir in Fruity Pebbles.
Tip ~ I like to use our Silicone Scraper Spatula because the marshmallows don’t stick the silicone. Makes it super easy to wash!
. Grease any sized springform pan with cooking spray, press mixture into pan and up the sides forming a crust. Then, let cool.
Making the filling:
. In a large bowl, using a hand mixer, beat together cream cheese and sugar until light and fluffy, then add vanilla and salt. Stir in Cool Whip until no lumps remain, then fold in Fruity Pebbles.
. Spoon filling into your Fruity Pebble crust and let settle in fridge for at least 5 hours.
I hope you enjoy this recipe and get the chance to share it with family and friends ! Fruitty Pebbles will always be a childhood classic and this cheese filling pairs well with it! Make sure to share your images and tag us on Instagram, Facebook, or Twitter! @Bakell_Baking
