Super Easy Summer Dessert Recipe Ideas

It's the warmer months and everyone's looking for easy summer dessert recipes to make on any given day.

I'm sure you've had a cake pop before, but probably not a cakesicle. You're probably wondering, what the heck the difference is? They're basically sisters, except cakesicles are way easier to make that cake pops, in my experience.

Cakesicles vs Cake Pops

Unlike a cake pop, which is made by rolling a cake and frosting combo into a ball (or another shape) then dipping it in chocolate or candy melts, a cakesicle is created by painting melted chocolate into a "cakesicle" mold, letting it harden, then filling the hardened candy shell with the cake/frosting mixture.

Here's everything you need to make some really fun cakesicles this summer!

Easy Summer Dessert Recipes

Summer desserts + cakesicle mold + Bakell

 Simple Cakesicle Filling

  • 1 baked 9 inch by 13-inch sheet cake (or two 8-inch round or square cakes)
  • 1/3 cup frosting, plus more if desired
  • 32 ounces melted and tempered chocolate or melted confectionery coating of choice - white, milk, dark chocolate whatever you want.
  • Once cool, crumble the cake and blend it together with the frosting.
  • Add more frosting if desired until the cake ball filling has a nice chocolate truffle style texture.

Chocolate Shell

  • Spoon 1 tablespoonful of melted chocolate into one popsicle cavity.
  • Paint it into a thin layer on the bottom and up the sides of the mold.
  • Immediately insert then remove a popsicle stick into the mold, to remove any chocolate from that area.
  • Repeat creating 4 chocolate shells in your popsicle mold.
  • Pop the mold into the refrigerator, if using pure white chocolate, and into the freezer if using confectionery coating (Candy Melts).
  • Chill for 3-5 minutes until the candy hardens.
  • Scoop out 1 tablespoonful of the cake ball filling and press it into the candy shell, leaving at least 1/16 of an inch of space at the top for the additional layer of chocolate.
  • Repeat filling all the popsicles.
  • Spoon about a teaspoon of chocolate over top and spread it out thin.
  • Use an offset spatula to scrape off any excess chocolate.
  • Repeat covering all the cakesicles.
  • Chill for about 2 minutes until the candy layer hardens.
  • Unmold the cakesicles and they are ready to serve as is, or decorate with fondant pieces, drizzle with melted chocolate, sprinkles, decorate with edible dessert glitter or luster dust!

The possibilities are virtually endless, you can make them for any holiday or theme you want. You can also fill them with brownie instead of cake if that's what you prefer, just mix in frosting like you would with the cake recipe.

One filling I absolutely love is edible cookie dough filled cakesicles!

Cookie Dough Filling

  • ¾ cup packed brown sugar
  • ½ cup butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • 2 tablespoons milk
  • ½ cup milk chocolate chips
  • ½ cup mini chocolate chips


Combine brown sugar and butter in a large bowl; beat with an electric mixer until creamy. Mix in vanilla extract and salt. Add flour; mix until a crumbly dough forms. Mix in milk. Fold in milk chocolate chips and mini chocolate chips. Scoop out 1 tablespoonful of the cake ball filling and press it into the candy shell, leaving at least 1/16 of an inch of space at the top for the additional layer of chocolate.

Here is an easy cupcake recipe to make with your kiddos!

  • 2 cups flour
  • 1⁄2 teaspoon salt
  • 2 teaspoons baking powder
  • 1⁄2 cup butter, softened
  • 3⁄4 cup sugar
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon vanilla

Preheat oven to 375 F or 190 C; line muffin cups with papers. Cream butter and sugar till light and fluffy (make sure the butter is room temp so the mixture doesn't clump). Beat in eggs one at a time. Add flour (mixed with baking powder and salt) alternating with milk beat well; stir in vanilla. Divide evenly among lined pans and bake for 18 minutes. Let cool in pans and then decorate with your favorite frosting.
